Who loves burritos? Who hates feeling like a lethargic slug after eating a giant burrito? Same. I made these delicious breakfast burritos for this week’s meal prep, and after just now calculating the macros, I think I am going to make these a weekly staple!
I am always rushing to the gym in the morning, so having a substantial breakfast that is mobile, healthy and yummy is tough to find! These tortillas are a little crumbly when first assembling the burritos, but after a night in the freezer and the 2 minute microwave cook, they stayed together and were easy to eat! They would be yummy with sausage too, but one can never go wrong with bacon! This recipe makes 15 burritos.
Macros (per burrito): 212 cal, 12g fat, 14g carb, 13g protein
-15 La Favorita multigrain tortillas
-8 large strips bacon
-2/3c shredded cheddar cheese
-15 whole eggs
-3 medium bell peppers (chopped)
-1/2 medium onion (chopped)
-2 handfuls spinach
-1/4 c jalepenos (chopped)
-Salt & pepper (to taste)
-Salsa (for serving)
-Cook bacon (I bake it to let the grease run off into cookie sheet)
-Sautee peppers, onion and jalepenos
-Set veggies and bacon aside once done cooking
-Cook eggs and spinach together (I whisk once in the pan)
-Add salt and pepper as desired
-Fill the tortillas, wrap them up and put them in a baggie and freeze until ready to serve
-Take burrito out of baggie
-Wrap in damp paper towel
-Microwave for 2 minutes
-Serve with salsa!
