Souvlaki Chicken

I have to give credit to one of my amazing clients for this one–Angela nailed it with this recipe! I often burn out on my meal prep chicken by the end of the week because of how dry it’s gotten, but with the tzatziki sauce, the chicken stays fresh and moist all week! 

The meal I make with it consists of: 4oz chicken/zucchini mixture, 1/3c tzatziki sauce, 1/2c halved grape tomatoes and 2oz red potato. 


Ingredients for Souvlaki Chicken: 

-3tbs fresh lemon juice
-1.5tsp chopped fresh (1/2tsp dried) oregano
-2tsp olive oil
-1/2tsp salt
-4 garlic cloves (minced)
-1/2lb boneless, skinless chicken breast (cut into 1-inch pieces) 
-1 medium zucchini (quartered lengthwise and cut into 1/2-inch thick slices)

Ingredients for Tzatziki Sauce: 

-1.5 cups plain greek yogurt
-1 large cucumber (finely chopped)
-4 cloves garlic (minced)
-1/2 lemon (juiced)
-2tbs olive oil
-1.5tsp dried dill weed, or 1-2tbs fresh (minced)
-Pink himalayan salt to taste (or regular salt if preferred)
-Pepper to taste 

Directions for Souvlaki Chicken:

-Combine everything in a plastic bag and shake to mix (let sit for 15-20 minutes)
-Heat over medium-high heat until chicken is cooked through

Directions for Tzatziki Sauce:

-Chop cucumber first to let as much water leak out as possible
-Combine all ingredients and let set in fridge until ready to eat
